Whole Roasted Plaice with Lemon and Herbs

October brings with it an abundance of fresh seafood, and there’s no better way to enjoy it than with a simple and delicious whole roasted plaice. This recipe highlights the natural flavours of the plaice, enhanced with a touch of lemon and herbs. Perfect for a cozy autumn evening, this dish is easy to prepare and makes for an impressive, healthy meal that everyone will love. Ingredients:

2 whole plaice, (gutted)
2 tablespoons olive oil
1 lemon, sliced into rounds
3-4 sprigs fresh parsley (plus extra for garnish)
2 cloves garlic, minced
Salt and black pepper, to taste
Baking parchment or foil for roasting

 


Instructions:

Preheat Oven: Preheat your oven to 200°C (400°F).

Prepare Plaice: Line a baking tray with parchment paper or foil. Place the cleaned plaice on the parchment.

Season Fish: Rub both sides of the plaice with olive oil, ensuring it’s evenly coated. Sprinkle salt and freshly ground black pepper over the fish.

Add Flavourings: Scatter the minced garlic over the plaice. Lay the lemon slices along the middle of the fish, and tuck some fresh parsley sprigs around it.

Roast: Fold the parchment paper or foil loosely around the plaice to create a pouch (this helps to keep it moist while roasting). Place the tray in the preheated oven and roast for about 20-25 minutes, or until the flesh flakes easily with a fork.

Garnish and Serve: Carefully open the parchment pouch, being mindful of the steam. Garnish with more fresh parsley before serving. Serve hot with your favourite sides, such as roasted potatoes or a fresh salad.

 

Tips:

You can also add a splash of white wine before sealing the pouch for extra flavour.
Serve with a drizzle of melted butter for a richer taste.
